Calcium Carbonate (Brewers Chalk) is used to lower the acidity in wine or beer. Recommended before fermentation. 2.5 grams per gallon will lower the acidity approximately 0.1% You do not want to adjust your wine more than 0.3 - 0.4% or you will end up with a chalky/ gritty taste in your wine.
